Smoky chipotle oysters

Elevate your holiday party with zesty lime and tequila salsa-topped oysters.
Ingredients:
  • 2 spring onions, thinly sliced lengthways
  • 3 small tomatoes, seeded, finely chopped
  • 187.50 ml roasted red capsicum, finely chopped
  • 1 long red chilli, seeded, finely chopped
  • 40.00 ml coriander, finely chopped
  • 60ml lime juice
  • 27.30 gm olive oil
  • 3 tsp tequila (optional)
  • 7.50 gm caster sugar
  • 2.60 gm Tabasco Chipotle Pepper Sauce
  • Ice, to serve
  • 36 oysters, shucked
Instructions:
  • Place spring onion in a bowl and cover with ice water, allowing it to curl for 5 minutes. Drain before using.
  • In a bowl, mix together tomatoes, bell peppers, chili, and coriander. In a separate container, stir lime juice, oil, tequila (if using), sugar, and Tabasco until sugar dissolves. Season the mixture and combine with the tomatoes. Place ice in a serving dish, layer oysters on top, then spoon over the tomato mixture and garnish with spring onion curls.
