Impress guests with quick and tasty stuffed eggs - ideal appetizer ready in 25 minutes.
Ingredients:
  • 12 hard-cooked eggs
  • 1/3 cup mayonnaise
  • 2 medium green onions, chopped (2 tablespoons)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon smoked paprika
  • 3 slices bacon, crisply cooked, crumbled (1/4 cup)
  • 24 sliced ripe olives (from 2 1/4-oz can), chopped
Instructions:
  • Peel the eggs and cut them in half lengthwise. Gently remove the yolks and place them in a medium bowl. Set the egg whites aside. Use a fork to mash the yolks until smooth, then mix in mayonnaise, 1 tablespoon of onion, mustard, lemon juice, salt, pepper, and paprika.
  • Spoon the egg yolk mixture generously into the egg white halves. Top with crispy bacon, briny olives, and the remaining tablespoon of onion. Enjoy right away or refrigerate for up to 24 hours before serving.
