Smoky lamb cutlets with creamy pasta salad

Indulge in a creamy pasta salad alongside spicy lamb cutlets for a delicious pairing.
Ingredients:
  • 2.50 gm smoked paprika
  • 2.50 gm ground cumin
  • 1.25 gm ground ginger
  • Pinch of sugar
  • Pinch of salt
  • 480g lamb cutlet
  • Spray oil
  • 1kg tub pasta salad
  • 60g silverbeet
  • 40g pine nut
  • Finely grated zest of 1 orange
Instructions:
  • Mix together the paprika, cumin, ginger, sugar, and salt in a bowl. Then, evenly coat both sides of the cutlets with the spice mix.
  • Preheat a large heavy-based frying pan over medium heat. Generously coat the cutlets with oil and cook for about 2 minutes on each side or until they reach your preferred level of doneness. Then, cover the lamb with foil and let it rest for 5 minutes before serving.
  • Combine the creamy pasta salad, silverbeet, pine nuts, and zest in a bowl. Gently mix everything together until well combined. Serve the cutlets with the pasta salad.
