Smoky slaw recipe

Vibrant smoky slaw, a BBQ must-have with a refreshing summer beverage.
Ingredients:
  • 2 corn cobs, husks and silk removed
  • 40g butter, melted
  • 1.25 gm smoked paprika or chipotle seasoning
  • 1 red capsicum, seeded, thinly sliced
  • 2 limes, halved
  • 350g pkt Special Burger Slaw Kit
  • 2 spring onions, chopped
Instructions:
  • Preheat a barbecue grill or chargrill to medium-high heat. Place corn in a large bowl and cover with boiling water. Let it sit for 5 minutes to soften, then drain well.
  • Mix together the butter and paprika or chipotle seasoning in a small bowl, seasoning to taste. Lightly spray the corn with olive oil spray and generously brush it with the butter mixture. Grill the corn, turning and basting with the seasoned butter, for 8 minutes or until nicely charred. Transfer the corn to a plate. Grill the capsicum, turning occasionally, for 2 minutes or until just tender, then transfer it to a bowl. Lastly, grill the lime halves cut-side down for about 1 minute or until nicely charred. Enjoy!
  • Carefully slice off the corn kernels using a small serrated knife. Combine the salad kit contents (without the dressing) in a large bowl with the corn and capsicum. Toss gently to mix. Drizzle the salad with the provided dressing. Top with spring onions, season to taste, and serve with chargrilled lime.
