Golden crispy tofu seasoned with paprika, cumin, and soy sauce makes a satisfying vegan wrap filling.
Ingredients:
  • 4.60 gm extra virgin olive oil
  • 100g firm tofu, broken into large pieces
  • 1 ⁄2.50 gm smoked paprika
  • 1 ⁄2.50 gm ground cumin
  • 5.30 gm salt-reduced soy sauce
  • 1 x 42g Simson’s Pantry Lite Low Carb Super Grains wrap
  • 20g baby spinach
  • 1 ⁄4 small avocado, thinly sliced
  • Chipotle sauce, to serve (optional)
Instructions:
  • In a small non-stick pan over medium heat, heat oil. Add tofu and cook for 1 minute. Stir in paprika, cumin, and soy sauce. Cook for an additional 2 minutes until tofu is lightly golden, stirring occasionally.
  • Place a generous amount of fresh spinach, ripe avocado, and seasoned tofu mixture on top of the wrap. Add a drizzle of flavorful chipotle sauce, if desired. Roll the wrap tightly to seal in all the delicious fillings.
