Indulge in a unique twist on snickerdoodle with this quick and easy cinnamon-sugar coffee cake.
Ingredients:
  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 2 cups white sugar
  • 0.5 cup shortening
  • 1 cup milk
  • 0.75 cup brown sugar
  • 3 tablespoons white sugar
  • 3 teaspoons ground cinnamon
  • 2 tablespoons melted butter
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • Combine flour, baking powder, 1 teaspoon of cinnamon, and salt in a bowl and set it aside.
  • In a bowl, cream together 2 cups of sugar and shortening until fluffy using an electric mixer. Mix in eggs and vanilla thoroughly. Gradually add flour mixture and milk in intervals, mixing well after each addition. Pour the batter into the prepared pan and spread evenly towards the edges.
  • Combine brown sugar, 3 tablespoons white sugar, and 2 teaspoons cinnamon in a small bowl, then evenly sprinkle the topping over the cake.
  • After baking for 30 minutes, remove the cake from the oven, drizzle melted butter evenly over it, then continue baking for an additional 5 minutes until a toothpick inserted into the center comes out clean.
