Fluffy cinnamon-sugar pancakes inspired by snickerdoodle cookies - a delicious breakfast treat.
Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon sea salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons butter, melted
  • 0.25 cup white sugar
  • 5 tablespoons butter, melted
  • 1 (7 ounce) can whipped cream
Instructions:
  • Whisk together flour, brown sugar, 2 teaspoons cinnamon, cream of tartar, baking powder, baking soda, and salt until well combined in a bowl.
  • In a small bowl, mix together buttermilk, egg, butter, and vanilla extract. Beat until the egg is broken up. Pour the mixture into the flour and stir until the batter is foamy and just combined.
  • Combine white sugar and cinnamon in a small bowl and whisk until well blended.
  • Preheat a non-stick griddle over gentle heat. Pour 1/3 cup of batter onto the griddle. Cook until bubbles appear and edges are set, about 3-4 minutes. Flip and cook until golden, around 2-3 minutes. Repeat with the rest of the batter.
  • Drizzle pancakes with rich melted butter, sprinkle with aromatic cinnamon-sugar, and finish with a dollop of fluffy whipped cream.
