Snow peas with ginger & chilli

Create a zesty Asian side dish by combining shredded snow peas with chili and ginger for a crunchy delight.
Ingredients:
  • 45g (1/4 cup) raw cashews
  • 9.20 gm peanut oil
  • 3cm-piece fresh ginger, peeled, thinly sliced
  • 1 garlic clove, thinly sliced
  • 1/2 long fresh red chilli, thinly sliced
  • 400g snow peas, trimmed, thinly sliced lengthways
  • 31.50 gm soy sauce
  • 30.00 ml dry sherry
Instructions:
  • In a hot wok or large deep frying pan over medium heat, stir-fry cashews until golden, about 2 minutes. Transfer to a plate.
  • Heat oil in a wok over medium-high heat. Stir-fry ginger, garlic, and chili until aromatic, about 30 seconds. Add snow peas and stir-fry for 1-2 minutes. Pour in soy sauce and sherry, stir-fry until snow peas are just tender, about 1-2 minutes. Add cashews and toss to combine.
