Create festive snowflake butter cookies to enjoy with a hot spicy drink or eggnog.
Ingredients:
  • 687.50 ml plain flour
  • 150.00 gm pure icing sugar
  • 125g butter, cubed, chilled
  • 1 egg, at room temperature
  • 4.40 gm vanilla extract
Instructions:
  • Combine flour and 3/4 cup sugar in a food processor. Blend for 30 seconds. Add butter and blend until mixture resembles fine breadcrumbs. Then add egg and vanilla. Blend until dough forms. Transfer dough to a floured surface, knead until smooth, and shape into a 20cm disc. Wrap in greaseproof paper and refrigerate for at least 1 hour until firm.
  • Preheat your oven to 180°C. Prepare 2 flat baking trays with baking paper. Roll out the dough between 2 sheets of baking paper to 5mm thickness. Use snowflake biscuit cutters to cut out shapes from the dough. Arrange on the trays and rework any leftover dough. Chill in the fridge for 30 minutes until firm.
  • Bake biscuits for 10 minutes, swapping trays halfway through, until light golden. Cool completely on trays, then dust with remaining sugar before serving.
