Indulge in festive snowflake cookies made with Gold Medal® flour, ideal for holiday treats.
Ingredients:
  • 3/4 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1 egg
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons meringue powder
  • 1 tablespoon cold water
  • 1/2 cup powdered sugar
  • Granulated sugar, if desired
Instructions:
  • In a large bowl, use an electric mixer to beat together the butter and brown sugar until light and fluffy. Add the egg and blend well. Gradually mix in the flour, baking soda, and salt on low speed until combined.
  • Divide the dough into 4 parts and shape each into a flat disk. Individually wrap each disk in plastic wrap and refrigerate for at least 2 hours until fully chilled.
  • Preheat your oven to 350°F. Prepare your cookie sheets with cooking parchment paper. Roll out one disk at a time on a floured surface to 1/4-inch thickness (keep the rest of the dough in the fridge). Use snowflake cutters to cut out shapes and place them on the prepared cookie sheets. Re-roll any scraps once, making sure to chill the dough again before cutting.
  • Bake for 8 to 11 minutes until lightly golden. Allow to cool for 2 minutes, then transfer from cookie sheets to cooling racks. Let cool completely for about 30 minutes.
  • In a medium bowl, whip meringue powder and cold water with an electric mixer until soft peaks form. Slowly mix in powdered sugar until soft peaks form, approximately 1 minute. Transfer frosting into a piping bag fitted with a medium round tip and decorate cookies. Sprinkle with granulated sugar and allow the frosting to set for about 5 minutes.
