Transform a succulent roast pork loin with a tasty blend of brown sugar, garlic powder, and seasoned salt. Include root veggies for a hassle-free, delicious one-pan meal.
Ingredients:
  • 1 (3.5 pound) boneless pork loin roast
  • 2 tablespoons light brown sugar
  • 1 tablespoon garlic powder
  • 2.5 teaspoons seasoned salt, divided
  • 2 pounds russet potatoes, peeled and cut into bite-size cubes
  • 2 pounds carrot, peeled and cut into 1/2-inch pieces
  • 1 medium onion, cut into eighths
  • 2 tablespoons extra-virgin olive oil, plus more for greasing
Instructions:
  • Heat the oven to 375 degrees F (190 degrees C) and lightly oil an open roasting pan with a roasting rack inside.
  • Dry the pork loin thoroughly using paper towels.
  • Combine brown sugar, garlic powder, and 1 1/2 teaspoons seasoned salt in a small bowl. Massage the brown sugar mixture onto all sides of the pork loin. Position the seasoned pork on the rack in the center of the roasting pan.
  • Toss potatoes, carrots, and onion in a bowl with olive oil and remaining seasoned salt until evenly coated. Spread vegetables around the pork on the roasting pan.
  • Roast in the preheated oven, uncovered, until no longer pink in the center, for approximately 90 minutes or until an instant-read thermometer inserted into the center reads 145F (63C).
  • Take the pork roast out of the oven, wrap it in foil, and let it rest for around 10 minutes. Slice it into 1/2-inch slices against the grain and serve warm with roasted vegetables.
