Ethereal biscuit flakes dusted with snowfall perfection.
Ingredients:
  • 250g butter, chilled, chopped
  • 750.00 ml plain flour
  • 199.50 gm icing sugar mixture
  • 57.20 gm honey
  • 2.50 gm ground cinnamon
Instructions:
  • In a food processor, combine butter, flour, and 1 cup icing sugar until it resembles fine breadcrumbs. Then, add the egg and honey and process until mixture just comes together.
  • Transfer the mixture to a lightly floured surface and knead it gently until it becomes smooth. Divide the dough in half and shape each portion into a disc. Wrap the discs in plastic wrap and refrigerate them for 30 minutes as instructed in the notes.
  • Preheat the oven to 170°C/150°C fan-forced and line 3 baking trays with baking paper. Roll out one dough disc between two sheets of baking paper to 5mm thickness. Use a 6cm snowflake-shaped cutter to cut out snowflakes from the dough, re-rolling and cutting any dough scraps. Place the snowflakes on the lined trays, spacing them 2cm apart. Bake each tray for 6 to 8 minutes until pale golden. Cool the snowflakes on a wire rack before serving.
  • In a bowl, mix cinnamon with the rest of the icing sugar. Generously sprinkle snowflakes with the cinnamon icing sugar mixture. Enjoy!
