Elevate your kid's party with delicious soft pink macarons loved by all ages!
Ingredients:
  • 127.50 gm desiccated coconut
  • 107.50 gm caster sugar
  • 2 eggwhites
  • pink food colouring
  • 10.00 gm cornflour
  • 50g dried strawberries, finely chopped
Instructions:
  • Preheat your oven to 150°C while you line two large baking trays with baking paper.
  • In a medium saucepan over low heat, gently mix together coconut, 1/3 cup caster sugar, 1 egg white, and 2 teaspoons cold water. Stir and cook for 3 minutes or until just warmed. Transfer the mixture to a large bowl.
  • With an electric mixer, whip the remaining egg white and sugar until stiff peaks form. Add 3 to 4 drops of food coloring and mix gently. Using a large metal spoon, fold in the egg white mixture, cornflour, and strawberries into the coconut mixture until just combined.
  • Transfer the mixture into a piping bag or a plastic bag with a corner cut off. Pipe the mixture into 3cm (base) x 4cm (high) cone shapes on prepared trays. Bake for 20 minutes or until slightly firm. Allow to cool.
