Strawberry White Chocolate Cookie Bars

Summer's perfect treat: Strawberry white chocolate cookie bars - irresistibly soft and fluffy.
Ingredients:
  • Cooking spray
  • 1 3/4 cups all purpose flour
  • 2 pinches salt, divided
  • 1 1/2 cup unsalted butter, room temperature, divided
  • 3/4 cup white sugar
  • 1 large egg
  • 1 1/2  teaspoon vanilla extract, divided
  • 1/2 cup white chocolate chips
  • 1 1/2 cup fresh strawberries, sliced
  • 1 teaspoon vegetable oil, or as needed
  • 2 1/2 cups powdered suga
Instructions:
  • Place a piece of parchment paper in the bottom of an 8-inch baking pan and lightly coat it with cooking spray.
  • Combine the flour, baking powder, and a pinch of salt in a bowl.
  • In a stand mixer bowl with the paddle attachment, cream together 1/2 cup of butter and white sugar until light and fluffy. Mix in an egg and 1 teaspoon of vanilla extract until well combined.
  • Sift in flour mixture slowly while gently incorporating white chocolate chips. Press dough into the pan, then chill in the refrigerator for 2 hours.
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Bake the cookie bars in the preheated oven for 15 minutes until lightly browned around the edges and set in the center. Then, allow them to cool completely on a wire rack for about 20 minutes.
  • Toss berries in a bowl with vegetable oil until coated. Spread berries out in a single layer on the prepared baking sheet.
  • Roast the berries for 25 minutes, turning them halfway through, until very soft. Then transfer to a small mixing bowl and let cool for 20 minutes. Discard any burnt bits and chop the berries slightly before moving on.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat 1 cup of butter until very smooth. Mix in berries until broken up and well combined. Gradually add 2 1/2 cups confectioners’ sugar on low speed. Add 1/2 teaspoon vanilla extract and a pinch of salt. Beat on high speed for 3 to 4 minutes until frosting is very fluffy. Spread over cooled cookies and slice into bars.
