Enjoy this delectable dessert hot out of the oven and indulge in each bite.
Ingredients:
  • Melted butter, to grease
  • Cocoa powder, to dust
  • 200g dark chocolate, coarsely chopped
  • 200g unsalted butter, coarsely chopped
  • 3 eggs
  • 2 egg yolks
  • 100g (1/2 cup) caster sugar
  • 1/2 tsp peppermint essence
  • 50g (1/3 cup) plain flour
  • Cocoa powder, extra, to dust
  • Pure icing sugar, to dust
  • Pouring cream, to serve
Instructions:
  • Prepare the muffin pans by greasing them with melted butter and lightly coating the insides with cocoa powder. Shake out any excess powder.
  • In a medium saucepan over low heat, combine the chocolate and butter. Stir with a metal spoon for 5 minutes until the chocolate melts and the mixture is smooth. Let it cool slightly for 5 minutes before using.
  • In a large bowl, use an electric beater to whip together the eggs, egg yolks, and sugar until the mixture doubles in size. Mix in the chocolate mixture and peppermint essence. Gently fold with a metal spoon until combined. Gradually sift in the flour, then whisk until just combined. Finally, divide the batter among the prepared pans. Enjoy your baking!
  • Preheat the oven to 200°C. Bake for 18 minutes or until the tops are crisp and the centers remain slightly wet when tested with a skewer. Use a flat-bladed knife to loosen the edges of each pan, then turn the puddings out onto a clean surface. Plate the puddings, dust with extra cocoa powder and icing sugar, and serve with cream.
