Indulgent chocolate puddings with gooey caramel centers for a blissful Easter.
Ingredients:
  • 125g dark chocolate, chopped
  • 150g butter, chopped
  • 3 eggs
  • 90.00 gm firmly packed brown sugar
  • 82.50 ml plain flour
  • 49.50 gm self-raising flour
  • 10.00 gm cocoa powder
  • 6 small caramel-filled Easter eggs
  • Pouring cream, to serve
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced and grease six 125ml (1/2 cup-capacity) ovenproof dishes or pudding moulds.
  • In a saucepan over gentle heat, melt the chocolate and butter together until smooth, stirring constantly for 2 to 3 minutes. Allow to cool for 10 minutes before using.
  • Beat eggs and sugar with an electric mixer until light and fluffy. Transfer the mixture to a bowl and gently fold in sifted flours, cocoa, and chocolate mixture.
  • Fill moulds with mixture and gently press 1 Easter egg into the center of each pudding. Bake for 10 to 12 minutes until edges are firm (puddings will be soft in the center). Flip puddings onto plates and top with cream before serving.
