Homemade sopa de fideos: Tomato soup with crispy pasta, just like the restaurant!
Ingredients:
  • 1 (14.5 ounce) can diced tomatoes
  • 1 small onion, chopped
  • 1 large clove garlic, coarsely chopped
  • 2 tablespoons olive oil
  • 1 (7 ounce) package fideo pasta, uncooked
  • 3 (14.5 ounce) cans chicken broth
  • coarse salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Combine tomatoes, onion, and garlic in a blender. Pulse to start blending, then blend for 30 seconds to 1 minute until smooth.
  • In a skillet over medium-low heat, gently fry fideo pasta in olive oil until golden brown, stirring often, for 2 to 5 minutes. Remove from heat.
  • Transfer the flavorful tomato mixture into a sizable saucepan and mix in the chicken broth and noodles. Allow it to come to a hearty boil, then lower the heat to medium-low and gently simmer until the noodles are tender, which should take about 7 to 8 minutes.
  • Season generously with salt and pepper, mix in fresh cilantro, and heat until warmed through.
