Irresistible Sopa seca de fideo: Angel hair pasta nests browned, simmered in savory broth with tomatoes and onions until fully absorbed. Perfect side dish for any meal.
Ingredients:
  • 1/2 pound angel hair nests or vermicelli (vermicelli usually comes in 1 pound packages, so about 1/2 a package)
  • 1/4 cup extra virgin olive oil
  • 1/2 yellow onion, chopped (about 3/4 cup)
  • 2 fresh tomatoes, peeled and chopped, or 1/2 cup crushed canned tomatoes
  • 2 cups chicken stock
  • Salt and pepper
Instructions:
  • Brown the angel hair nests: In a frying pan with a lid that fits the nests in a single layer, heat the oil until shimmering hot. Fry the vermicelli angel hair nests in batches on both sides until golden brown. Remove from pan.
  • In a hot skillet, caramelize the onions until lightly browned, approximately 5 minutes. Stir in the tomatoes and pour in the chicken broth. Season with salt and pepper according to taste.
  • Simmer angel hair nests in broth: Once the stock mixture is simmering, place the browned nests in a single layer in the pan, ensuring they cover the entire surface. Flip them over in the broth to coat evenly. Cover and simmer for about 5 minutes, or until liquid is absorbed. If the top is dry after 5 minutes, flip the nests over and cook for an additional minute.
  • Serve: Allow the dish to rest off the heat for 5 minutes to enhance flavors before serving.
