Sour cream & onion potato chip-inspired potato salad for the perfect potluck side dish.
Ingredients:
  • 2 ½ lb Yukon gold Potatoes, peeled
  • ½ cup sour cream
  • 2 tablespoons red wine vinegar
  • 2 teaspoons honey
  • 2 teaspoons Dijon mustard (or stone ground)
  • 1 clove garlic, finely chopped or pressed
  • 1 teaspoon onion powder
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • ⅛ medium red onion, finely chopped
  • 1 tablespoon chopped fresh chives
Instructions:
  • In a large pot of salted water, boil the potatoes until almost fork tender, around 15 minutes. Drain in a colander and cover with a dry kitchen towel to steam until fully tender, about 20 minutes.
  • Combine sour cream, red wine vinegar, honey, Dijon mustard, garlic, onion powder, salt, and pepper until velvety and well blended.
  • After the potatoes have cooled, cube them into 1-inch pieces and place them in a large bowl. Mix in red onion, sour cream dressing, and chives, gently tossing until the potatoes are evenly coated. For extra flavor, garnish with more chives and chopped red onion. Enjoy immediately or refrigerate until serving.
