Add a refreshing and flavorful side dish to your Christmas feast.
Ingredients:
  • 1.5kg small chat potatoes, halved
  • 4 green onions, thinly sliced
  • 235.00 gm sour cream
  • 35.10 gm wholegrain mustard
  • 21.00 gm lemon juice
  • 62.50 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • 1. In a large saucepan, add the potatoes and cover with cold water. 2. Bring to a boil over high heat, then reduce to medium heat. 3. Cook for 10-12 minutes until potatoes are just tender. 4. Drain the potatoes and set aside to cool for 15 minutes.
  • In a jug, mix together onion, sour cream, mustard, lemon juice, and parsley. In a bowl, combine potatoes with the onion mixture. Season with salt and pepper, then toss everything together before serving.
