South American-style beef with salsa criolla

Zesty South American salsa criolla features lime-infused onions for a burst of flavor.
Ingredients:
  • 5.00 gm ground cumin
  • 1 tsp ground allspice
  • 1 tsp dried oregano
  • 1/2 tsp dried chilli flakes
  • 2 garlic cloves, crushed
  • 40.00 ml red wine vinegar
  • 36.40 gm extra virgin olive oil
  • 600g piece beef skirt steak
  • Salad leaves, to serve
  • Steamed rice (see note), to serve
  • 3 tomatoes, finely chopped
  • 1 green capsicum, finely chopped
  • 1 small red onion, halved, thinly sliced
  • 21.00 gm lime juice
  • 18.20 gm extra virgin olive oil
  • 1 tsp red wine vinegar
Instructions:
  • Mix cumin, allspice, oregano, chili flakes, garlic, vinegar, and oil in a small bowl. Season with salt and pepper. Flatten beef to 1cm thickness using a meat mallet. Place beef in a large glass or ceramic dish and coat it with the spice mixture. Cover and refrigerate for 4 hours or overnight for best results.
  • Preheat a barbecue hotplate or grill to medium-high heat. Grill the beef for 3 to 4 minutes on each side for a medium cook, or to your desired doneness. Place the beef on a plate, cover loosely with foil, and let it rest for 10 minutes before serving.
  • Prepare the Salsa Criolla by combining tomatoes, capsicum, onion, lime juice, oil, vinegar, salt, and pepper in a medium bowl. Mix well to combine all the flavors.
  • Slice the beef thinly. Drizzle with salsa. Serve alongside crisp salad leaves and fragrant herbed rice.
