Easy baked yellow squash casserole with buttery bread crumb topping - a perfect meal addition.
Ingredients:
  • 3 pounds yellow summer squash, cut into 1-inch cubes
  • 0.75 cup dry bread crumbs
  • 0.5 cup chopped onion
  • 2 large eggs
  • 0.5 cup butter, melted
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Instructions:
  • Assemble all ingredients.
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a 2-quart baking dish.
  • In a large saucepan, submerge the squash in water and bring to a boil. Cook until tender, about 10 to 15 minutes.
  • Thoroughly drain the squash, then place it in a large mixing bowl and mash it to a slightly chunky consistency.
  • Combine 1/2 cup bread crumbs, onion, eggs, 1/4 cup melted butter, sugar, salt, and pepper, stirring until well mixed.
  • Evenly spread the mixture in the baking dish. Drizzle the remaining 1/4 cup of melted butter on top and sprinkle with the remaining 1/4 cup of bread crumbs.
  • Bake in the oven until golden brown and cooked through, approximately 1 hour.
