Transform chicken gizzards into tender delicacies by simmering, marinating, coating in spicy seasonings, and deep-frying to perfection.
Ingredients:
  • 1 pound chicken gizzards, rinsed
  • 2 stalks celery, cut into chunks
  • 1 onion, cut into chunks
  • 2 bay leaves
  • 1.5 teaspoons celery salt, divided
  • 1 teaspoon seasoned salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon dried Italian herb seasoning
  • 1 teaspoon garlic powder
  • 0.25 teaspoon ground cumin
  • 0.5 teaspoon Louisiana-style hot sauce
  • 3 cups oil for deep frying
  • 1 cup all-purpose flour
Instructions:
  • Prepare all ingredients.
  • In a saucepan, combine chicken gizzards, celery, onion, bay leaves, and 1 teaspoon celery salt. Add enough water to cover the gizzards by 1 inch. Bring to a boil, then simmer covered on low heat for about 2 1/2 hours until tender. Add additional water as needed to keep gizzards covered while simmering.
  • After cooking, transfer the gizzards to a bowl, eliminate the celery and onion, and save the broth for later use.
  • Combine 1/2 teaspoon each of celery salt, seasoned salt, pepper, Italian seasoning, garlic powder, cumin, and hot sauce, evenly mixing with the gizzards for maximum flavor infusion.
  • Drizzle 1/3 cup of the reserved broth over the seasoned gizzards, and chill for at least 30 minutes, stirring occasionally. (Extra broth can be saved or frozen for future recipes.)
  • Heat oil until it reaches 375 degrees F (190 degrees C) in a deep-fryer or large saucepan.
  • Add the flour and gizzards with seasoning to a plastic bag, then give it a good shake until the gizzards are evenly coated with flour.
  • Fry the gizzards in hot oil in batches until golden brown, about 5 minutes per batch. Drain on paper towels and serve hot.
