Southern Fried Chicken

Crispy, golden Southern fried chicken: season, coat, fry to perfection.
Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • salt to taste
  • ground black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 (3 pound) whole chicken, cut into pieces
  • 1 quart vegetable oil for frying
Instructions:
  • Assemble all the ingredients.
  • In a large resealable plastic bag, mix together flour, paprika, salt, pepper, garlic powder, onion powder, and cayenne. Add chicken pieces and shake well to coat evenly.
  • Lay the floured chicken pieces on a wire rack over a baking sheet, keeping the extra flour in the bag. Let the chicken chill in the refrigerator for 45 minutes or until the flour appears pasty.
  • As the oil reaches a temperature of 375 degrees F (190 degrees C, add 1 ½ inches of it to a deep fryer or 5-quart heavy pot.
  • Recoat the chicken pieces in the flour by placing them back in the bag for an extra crisp coating. Preheat the oven to 200°F (93°C).
  • Gently place 2 to 3 chicken pieces at a time into the hot oil. Fry until beautifully golden, turning halfway through, for approximately 8 to 12 minutes. Ensure the chicken reaches an internal temperature of 165°F (74°C) near the bone using an instant-read thermometer.
  • Place the fried chicken on a paper towel-lined plate to drain, then keep it warm in a preheated oven while you fry the remaining chicken.
  • Serve while piping hot and savor every bite!
