Southern Fried Smothered Cabbage

Feed your whole family with this wallet-friendly, southern-style smothered cabbage dish.
Ingredients:
  • 4 strips bacon, cut into 1-inch pieces, or more to taste
  • 1 medium head cabbage - cored, cut into eighths, and sliced
  • 2 cups water
  • 0.5 teaspoon cayenne pepper
  • salt to taste
  • 1 packet sugar substitute (such as Equal®)
Instructions:
  • Preheat a large cast iron pot with a lid over medium-high heat. Cook bacon until browned but not crispy, approximately 5 minutes. Toss in cabbage and water. Cover with the lid for a quick steam, about 1 minute. Season with cayenne pepper and salt, bring to a boil, and simmer for 15 minutes.
  • Uncover the pot and simmer over high heat until all liquid evaporates and cabbage browns on the bottom, about 10 minutes. Stir regularly to prevent sticking and ensure cabbage is wilted but not soggy.
