Decadent custard pie filled with plump raisins, coconut, and nuts, baked to perfection in just 35 minutes.
Ingredients:
  • 2 (9 inch) pie shells, partially baked
  • 1.5 cups raisins
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 6 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 cup chopped walnuts
  • 1 cup shredded coconut
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a small saucepan, add the raisins and cover them with water. Bring to a boil over low heat, then remove from heat and set aside.
  • In a large mixing bowl, cream the butter, white sugar, and brown sugar until fluffy. Beat in the eggs, vanilla extract, and cinnamon until well combined. Drain raisins and fold them into the mixture with nuts and coconut. The mixture may look curdled. Divide it evenly between the pastry shells.
  • Bake in a hot oven for 30-35 minutes until the filling is firm. Let it cool on wire racks, then top with whipped cream and chopped nuts for an elegant touch.
