Southern-style tomato gravy with tomatoes, bacon, and cream cheese served over flaky, hot biscuits.
Ingredients:
  • 1 (1 pound) package bacon
  • 2 tablespoons flour
  • 1 teaspoon butter
  • 2 (28 ounce) cans whole tomatoes
  • 2 teaspoons salt
  • 4 teaspoons ground black pepper
  • 0.5 cup heavy cream
  • 1 (3 ounce) package cream cheese, softened
Instructions:
  • Fry bacon in a large skillet over medium-high heat, flipping occasionally, until golden brown all over, around 10 minutes. Place cooked bacon on a paper towel-lined plate to drain, keeping the flavorful drippings in the pan.
  • Combine flour and butter with drippings in the skillet, using a wooden spoon to scrape off the delicious browned bits. Cook over medium heat until thickened, about 3 minutes. Add tomatoes, breaking them into small pieces to release juices, then season with salt and pepper.
  • Stir in heavy cream and cream cheese into tomato mixture. Simmer over medium-low heat, stirring often, until the gravy is hot and thick, approximately 10 minutes. Enjoy with bacon on the side.
