Southwestern Chicken Pie: A fusion of flavors with black beans, salsa, sour cream, and Cheddar cheese.
Ingredients:
  • 2 unbaked pie crusts
  • 0.25 (8 ounce) package shredded Cheddar cheese
  • 0.5 pound cubed cooked chicken breast meat
  • 0.5 cup uncooked instant rice
  • 1 (15 ounce) can black beans, drained
  • 1 cup cooked corn
  • 1 (2.25 ounce) can sliced black olives, drained
  • 1 cup sour cream
  • 0.75 cup prepared salsa
  • 0.75 (8 ounce) package shredded Cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • salt and pepper to taste
Instructions:
  • Preheat oven to 400°F (200°C) for a perfect bake.
  • Fit pie crust into dish and bake briefly in preheated oven. Sprinkle 2 ounces of Cheddar cheese on top and set aside.
  • Mix together chicken, instant rice, black beans, corn, black olives, sour cream, salsa, 6 ounces of Cheddar cheese, garlic powder, and cumin in a bowl. Season with salt and pepper. Pour into partially baked crust. Top with remaining crust, seal edges, and make slits on the top.
  • Bake for 25 minutes. Check the crust for browning; if needed, gently wrap a strip of foil around the edges. Continue baking until the pie is golden brown and bubbling, about 15 to 20 minutes more.
  • Let the pie rest for 10 minutes before enjoying.
