15-minute Southwestern chicken sandwiches with salad greens, veggies, and cheese. Easy and delicious dinner option!
Ingredients:
  • 1 loaf (1 pound) French bread
  • 1/3 cup mayonnaise or salad dressing
  • 1 tablespoon Key West-style coarsely ground seasoning blend
  • 6 ounces Monterey Jack cheese, sliced
  • 1 pound sliced cooked deli chicken breast
  • 2 cups lightly packed spring salad greens mix or small lettuce leaves
  • 1 medium sweet onion or Bermuda onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced into rings
Instructions:
  • Slice the bread in half horizontally. Combine mayonnaise and seasoning, then spread the mixture evenly over the cut sides of the bread.
  • Create a flavorful masterpiece by stacking cheese, chicken, salad greens, onion, and red pepper on the bottom half of the bread. Place the top half of bread on top and use 6 long wooden picks or small skewers to secure the loaf. Finish by cutting the sandwich into 6 perfect serving pieces.
