Try this flavorful Southwestern chicken chili with Progresso® broth and cannellini beans for a delicious side dish.
Ingredients:
  • 1 tablespoon canola oil
  • 3/4 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1 clove garlic, finely chopped
  • 2 teaspoons from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix
  • 2 3/4 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 cups shredded cooked chicken
  • 2 cans (15 oz each) Progresso™ cannellini beans, drained
  • 3/4 cup shredded pepper Jack cheese, if desired
  • Sour cream, if desired
  • Chopped green onions, if desired
Instructions:
  • Heat oil in a Dutch oven or 4-quart saucepan over medium-high heat. Cook onion, bell peppers, and garlic for 5 minutes, stirring occasionally, until tender. Stir in taco seasoning mix and cook for an additional minute.
  • Combine the broth, chicken, and beans in the pot. Bring to a boil, then lower the heat. Cover and let it simmer for 20 minutes, stirring occasionally until everything is heated through. Serve each portion with cheese, and add a dollop of sour cream and some chopped green onions for extra flavor.
