Ingredients:
  • 1 large onion, chopped
  • 3 large garlic cloves, minced
  • 3 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 tablespoon ground cumin
  • 3 pounds lean ground beef or turkey
  • 1 (14.5 ounce) can petite diced tomatoes
  • Salt and pepper, to taste
  • 0.25 cup cornmeal
Instructions:
  • In a 12-inch skillet, heat oil until shimmering. Saute onion until soft, about 5 minutes. Add garlic, chili powder, oregano, and cumin; continue sauteing until fragrant, about 1 minute. Add beef or turkey and cook until no longer pink. Stir in tomatoes and simmer for 5 minutes to blend flavors. Season with salt and pepper. Sprinkle in cornmeal and cook until thickened quickly. Serve warm for dinner as tacos or taco salad, or cool and refrigerate for later.
