Savor a medley of Swiss brown, cup, and enoki mushrooms in this flavorful stir fry. Mix and match your favorite mushrooms for a delicious twist!
Ingredients:
  • 65.63 gm Soy Sauce
  • 24.40 gm oyster sauce
  • 32.00 gm brown sugar
  • 450g fresh thin hokkien noodles
  • 1 brown onion, cut into thin wedges
  • 1 long red chilli, finely chopped
  • 500g mixed mushrooms (see note), thickly sliced
  • 1 bunch broccolini, trimmed, halved
Instructions:
  • In a small bowl, mix together soy sauce, oyster sauce, and brown sugar. Place noodles in a heatproof bowl and cover with boiling water. Let stand for 1 to 2 minutes until just tender. Drain and use a fork to separate the noodles.
  • - Preheat a wok over high heat and coat with oil. - Stir in onion and cook for 3 minutes until softened. - Add garlic and chili, cook for 1 minute until fragrant. - Toss in mushrooms and broccolini, stir-fry for 3-4 minutes until tender. - Add sauce mixture and noodles, stir-fry for 2 minutes until heated through. - Serve and enjoy!
