Soy and vegetable pita burgers

Try these irresistible vegetarian patties - ideal for stuffing pitas or burgers!
Ingredients:
  • 9.20 gm olive oil
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 2 green onions, thinly sliced
  • 400g can soybeans, drained, rinsed
  • 1/2 small zucchini, grated
  • 1/2 small carrot, peeled, grated
  • 1 egg, lightly beaten
  • 125.00 ml dried multigrain breadcrumbs
  • 4 small wholemeal pita rounds, halved
  • 100g mesclun salad mix
  • 1 medium tomato, thinly sliced
  • 62.50 ml reduced-fat hommus dip
Instructions:
  • In a non-stick frying pan over medium-high heat, heat 1 teaspoon oil. Add cumin, coriander, and onion, stirring and cooking for 2 to 3 minutes until fragrant. Remove from heat. Place beans in a bowl and mash until almost smooth.
  • Combine the cumin mixture, zucchini, carrot, egg, and breadcrumbs with the beans. Mix well. Form the mixture into 8 balls using 2 tablespoons each. Gently flatten them and place on a plate. Cover and refrigerate for 15 minutes, if desired.
  • In a frying pan over medium-high heat, fry the patties in the remaining oil for 3 to 4 minutes per side until golden brown and fully cooked.
  • Stuff each pita half with fresh salad, sliced tomato, and a savory patty. Finish with a generous dollop of creamy hummus. Enjoy your delicious meal!
