Elevate your omelet with spicy Trader Joe's® soy chorizo for a satisfying twist.
Ingredients:
  • 4 eggs
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 garlic clove, chopped
  • 12 ounces soy chorizo (such as Trader Joe's®)
  • 0.33333334326744 cup milk
  • salt to taste
Instructions:
  • In an ovenproof skillet, warm olive oil over medium heat. Sauté onion and garlic until tender, for about 5 minutes. Stir in soy chorizo and cook until heated through, stirring frequently, for about 5 minutes.
  • Position the oven rack 6 inches below the heat source and preheat the broiler.
  • Combine eggs, milk, and salt in a small bowl and beat until smooth. Pour the mixture into a skillet and gently stir to ensure even distribution. Cook over medium heat until the eggs are set on the bottom and nearly cooked through on top, approximately 5 minutes.
  • Place the skillet in the oven and broil until the top is golden brown and set, which should take around 3 to 5 minutes. Allow it to rest for 5 minutes before serving.
