Soy chorizo in zesty marinara sauce mimics traditional Bolognese, adding a spicy twist to this vegetarian favorite.
Ingredients:
  • 3 cups water
  • 1 (16 ounce) package thin spaghetti
  • 18 ounces marinara sauce
  • 1 (14.5 ounce) can diced tomatoes
  • 12 ounces soy chorizo
  • 0.5 teaspoon cayenne pepper
  • 2 teaspoons chopped fresh basil
  • 0.5 teaspoon freshly ground black pepper
  • fine sea salt to taste
Instructions:
  • In a medium pot, bring 3 cups of lightly salted water to a boil. Add pasta and cook for about 11 minutes, stirring occasionally, until al dente.
  • In a large skillet over medium heat, warm olive oil. Stir in marinara sauce and diced tomatoes. Mix in soy chorizo until evenly combined, about 3 to 5 minutes. Sprinkle in oregano, cayenne pepper, and paprika. Reduce heat and simmer until pasta is ready, around 8 minutes. Finish by adding basil.
  • After cooking the pasta, drain it and generously coat it with the delicious sauce. Finish off with a sprinkle of freshly ground black pepper and a touch of salt to enhance the flavors.
