Family-friendly vegetarian spaghetti bolognese - quick and tasty!
Ingredients:
  • 400g spaghetti
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 1 celery stalk, finely chopped
  • 3 garlic cloves, finely chopped
  • 420g jar cherry tomato pasta sauce (see note)
  • 250g punnet cherry tomatoes
  • 400g can lentils, rinsed, drained
  • 40g cheese
  • Basil leaves, to serve
Instructions:
  • Prepare the pasta in a generous amount of boiling salted water as directed on the package.
  • Begin by heating oil in a frypan over medium heat. Saute onion, celery, and garlic until softened, approximately 2 minutes. Stir in pasta sauce and 1/2 cup (125ml) water, then simmer. Add tomatoes and cook until softened, around 5 minutes. Finally, mix in lentils, season to taste, and cook for an additional minute.
  • After draining the pasta, generously coat it with the sauce. Portion it into individual bowls and garnish with your choice of vegetarian hard cheese or parmesan and fresh basil leaves. Enjoy your meal!
