Vibrant lentil and cherry tomato beef bolognese with basil is a quick and delicious family favorite, ready in 20 minutes!
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 500g beef mince
  • 95g tomato paste
  • 4 garlic cloves, finely grated
  • 75g jam
  • 42.00 gm soy sauce
  • 400g can lentils, rinsed, drained
  • 375g instant lasagne sheets
  • 500g mixed cherry tomatoes, halved
  • Pinch of Oregano Leaves
  • Basil leaves, to serve
  • Grated parmesan, to serve
Instructions:
  • In a large pan over high heat, heat the oil. Cook the mince, stirring, for 3 minutes until browned. Stir in tomato paste and garlic, then add onion jam, soy sauce, lentils, and 1 cup (250ml) water. Reduce heat to medium, season with black pepper, and simmer for 12 minutes until slightly reduced. Remove from heat.
  • Cook lasagne sheets in a pot of boiling salted water until al dente following the package directions. Then, drain the sheets.
  • Layer lasagne sheets with flavorful bolognese, ripe tomatoes, fragrant oregano, fresh basil, and savory parmesan for a delicious final presentation.
