20-Minute Healthy and Satisfying Tofu Mushroom Ramen
Ingredients:
  • 4 Free Range Eggs
  • 18.40 gm vegetable oil
  • 300g firm tofu, thinly sliced
  • 2l mushroom
  • 270g ramen noodles
  • 100g fresh shiitake mushrooms, sliced
  • 400g pkt frozen edamame, thawed, peeled
  • 1/2 sheet nori, finely shredded
  • 3.00 gm sesame seeds, toasted
Instructions:
  • Simmer the eggs in boiling water for 7 minutes for a soft-boiled texture or until desired doneness. Then, cool them quickly in cold water.
  • Heat oil in a medium frying pan over medium heat. Cook tofu in two batches for 2 minutes on each side until golden brown.
  • In a large saucepan, bring stock to a boil over high heat. Reduce to medium heat and add noodles and mushrooms. Cook for 3 minutes until noodles are tender, stirring occasionally. Stir in edamame and cook for 1 minute until heated through.
  • Peel the eggs and halve them. Divide the noodle mixture into serving bowls. Top with tofu, egg, nori, and sprinkle with sesame seeds.
