Tofu and mushroom miso

Cozy up with a comforting bowl of miso on a chilly evening.
Ingredients:
  • 4.60 gm vegetable oil
  • 1 tsp sesame oil
  • 100g Swiss brown mushrooms, thinly sliced
  • 48.00 gm brown miso
  • 1000.00 gm boiling water
  • 1/2 bunch choy sum leaves, washed, shredded
  • 150g drained silken firm tofu, cut into small cubes
  • 20.00 ml mirin
Instructions:
  • In a saucepan over medium heat, heat vegetable oil and sesame oil, then add mushrooms and cook for 1 to 2 minutes. In a heatproof jug, mix miso with water, then pour into the saucepan and bring to a boil.
  • Lower the heat to medium and add choy sum and tofu. Stir until the choy sum wilts and the tofu is heated through, then mix in the mirin. Serve and enjoy.
