Tofu and mushroom burgers recipe

Ready in 25 minutes, this delicious tofu and mushroom burger is packed with flavor and nutrition.
Ingredients:
  • 4 large flat mushrooms
  • 1 garlic clove, crushed
  • 450g firm tofu, thickly sliced
  • 20.00 ml Moroccan seasoning
  • 150g beetroot hommus or dip
  • 80g baby rocket leaves
  • 2 Lebanese cucumbers, peeled into ribbons
  • 125.00 ml mint leaves, torn
Instructions:
  • 1. Preheat the grill to high heat and line a baking tray with foil. 2. Arrange mushrooms on the prepared tray. 3. Mix oil and garlic in a small bowl, then brush the mushrooms with the mixture. 4. Season the mushrooms with salt and pepper. 5. Grill the mushrooms for 1-2 minutes on each side or until tender.
  • Combine tofu and Moroccan seasoning in a bowl, ensuring all pieces are evenly coated. Heat a large non-stick frying pan over medium-high heat, then spray with olive oil. Cook tofu for 2-3 minutes per side until golden brown.
  • Arrange mushrooms evenly on serving plates. Layer with tofu, hummus or dip, rocket, cucumber, and mint.
