Quick and delicious Italian dinner made with whole grain pasta, turkey sausage, and lean ground beef. Packed with veggies and seasonings for a flavorful meal in just 20 minutes! Perfect for a healthy family favorite.
Ingredients:
  • 1 package (13.25 oz) whole-grain linguine
  • 2 links (4 oz each) spicy Italian turkey sausage, casings removed
  • 1 lb extra-lean (at least 90%) ground beef
  • 1 large onion, chopped (1 cup)
  • 1 package (8 oz) fresh whole mushrooms, chopped
  • 1 tablespoon finely chopped fresh or 1 teaspoon dried rosemary leaves
  • 1 can (28 oz) petite diced tomatoes, undrained
  • 1/2 cup evaporated fat-free milk
  • 1/4 teaspoon freshly ground pepper
  • 1/8 teaspoon salt
  • Shaved Parmesan cheese, if desired
Instructions:
  • Prepare linguine in a 5-quart Dutch oven following package instructions, skipping salt and oil. Drain and return to the pot, covering to maintain warmth.
  • Spray a 12-inch skillet with olive oil cooking spray and heat over medium-high heat. Cook sausage, beef, and onion for 2 minutes, stirring to crumble the sausage. Drain if needed. Add mushrooms and rosemary and continue cooking for 5 minutes, stirring occasionally, until sausage and beef are fully cooked.
  • Add the tomatoes and stir gently. Reduce the heat and let it simmer without a lid for 3 minutes. Then, mix in the milk, pepper, and salt, and continue cooking for an additional 2 minutes.
  • Pour the rich meat sauce over the linguine in a Dutch oven and toss until well coated. Serve each portion with a generous sprinkle of cheese on top.
