Instant Pot® simplifies making a rich, comforting rotini Bolognese for the family.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • salt and ground black pepper to taste
  • 1 medium sweet onion, chopped
  • 4 medium carrots, chopped
  • 4 stalks celery, chopped
  • 10 medium cherry tomatoes, halved
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1 pinch dried oregano
  • 0.5 cup red wine
  • 3 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 1 teaspoon unsweetened cocoa powder
  • 1 (28 ounce) can crushed tomatoes
  • 1 (16 ounce) package rotini pasta
  • 0.25 cup heavy cream
  • 1 tablespoon grated Parmesan cheese, or to taste
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot®) on the Saute function. Heat oil, then add ground beef, salt, and pepper. Cook until browned and crumbly, about 5 to 7 minutes. Strain and set aside in a bowl.
  • Place onion, carrots, celery, and cherry tomatoes in the cooker and sauté until soft, approximately 8 to 10 minutes. Stir in garlic, Italian seasoning, and oregano, and cook for an additional 2 to 3 minutes. Add back the ground beef, pour in the red wine, and simmer until the wine has slightly reduced.
  • Combine tomato paste, soy sauce, and cocoa powder in a small bowl.
  • Incorporate the tomato paste mixture into the pot, using a wooden spoon to gather up the flavorful bits at the bottom. Layer the crushed tomatoes on top without mixing. Finish by deactivating the Saute mode, sealing the lid securely.
  • Follow the manufacturer's instructions to set the Instant Pot to high pressure and set the timer for 4 minutes. Allow 10 to 15 minutes for the pressure to build up.
  • Release pressure using quick-release method per manufacturer's instructions for approximately 5 minutes. Unlock and lift off the lid.
  • Layer pasta in the pot without stirring. Seal the lid, set to high pressure for 3 minutes, and let pressure build for 10 to 15 minutes.
  • Carefully quick-release pressure following manufacturer's instructions, about 5 minutes. Remove the lid, then stir in cream and Parmesan until combined. Serve.
