Make a flavorful tomato mushroom pasta sauce with red wine using your Instant Pot®. Perfect for freezing and serving with spaghetti and meatballs.
Ingredients:
  • 8 ounces sliced fresh mushrooms
  • 1 cup chopped onions
  • 1 teaspoon fennel seeds
  • 3 cloves garlic, minced
  • 0.75 cup dry red wine
  • 1 (28 ounce) can crushed tomatoes
  • 1 (6 ounce) can tomato paste
  • 0.75 cup chicken broth, or more as needed
  • 1 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary, crushed
  • 0.5 teaspoon salt
  • 0.25 teaspoon crushed red pepper flakes, or more to taste
  • 1 large bay leaf
Instructions:
  • Preheat Instant Pot® on Saute mode. Heat olive oil, then sauté mushrooms, onions, and fennel seeds until softened, about 3 minutes. Stir in garlic and cook for 1 minute. Add red wine and simmer until alcohol evaporates, about 3 minutes.
  • Combine tomatoes, tomato paste, and chicken broth in the pot and bring to a gentle simmer. Mix in sugar, basil, oregano, rosemary, salt, crushed red pepper flakes, bay leaf, and pepper. Turn off the Saute function.
  • Secure the lid tightly and ensure the pressure valve is set to sealing. Choose high pressure setting as per the manufacturer's guidelines, then set timer for 10 minutes. Let the pressure build for 10 minutes.
  • After cooking, safely release pressure using the natural-release method as per the manufacturer's instructions for 5 minutes. Then, unlock and lift off the lid.
  • Adjust seasonings of sauce to taste. If sauce is too thick, gently incorporate chicken broth or water until desired consistency is achieved.
