Instant Pot® Spaghetti and Meatballs Florentine

Instant Pot® makes homemade spaghetti and meatballs a one-pot meal, using sauté and pressure-cooking functions for savory flavor infusion. Meatballs, pasta, and sauce cook together under pressure, finished with fresh spinach, Parmesan, pepper, and lemon for a truly perfect dish.
Ingredients:
  • 1 lb ground turkey (at least 93% lean)
  • 3/4 cup Progresso™ Panko Italian style crispy bread crumbs
  • 1/2 cup finely chopped yellow onion
  • 1 egg, slightly beaten
  • 3 cloves garlic, finely chopped
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 carton (32 oz) Progresso™ chicken broth
  • 1/2 cup heavy whipping cream
  • 12 oz uncooked spaghetti, broken in half
  • 4 oz (from 8-oz package) cream cheese, softened and cubed
  • 1/2 cup shredded Parmesan cheese, plus additional for serving, if desired
  • 1 package (5 oz) fresh baby spinach
  • 2 tablespoons lemon juice
Instructions:
  • Combine turkey, bread crumbs, onion, egg, garlic, Worcestershire sauce, salt, and 1/4 teaspoon pepper in a large bowl. Form the mixture into 12 meatballs, each 2 inches in size.
  • Preheat Instant Pot® to SAUTE, normal setting. Heat oil until very hot. Add meatballs and cook without moving for 4-5 minutes until they release easily. Flip and brown on second side for 2-3 minutes. Flip once more and brown for another 2-3 minutes. Cancel SAUTE function and transfer meatballs to a plate using a slotted spoon or tongs.
  • Combine the broth and whipping cream with the meatball drippings in the insert. Scrape the bottom to release any browned bits. Add the spaghetti and mix well to coat it in the sauce.
  • Distribute meatballs evenly on top of spaghetti mixture. Secure the lid, set the pressure valve to SEALING, and pressure cook on high for 8 minutes. Once done, release pressure quickly by setting the pressure valve to VENTING.
  • Blend cream cheese and Parmesan cheese into the mixture for 1 to 2 minutes until the cheese melts and spaghetti loosens up. Although spaghetti might seem clumped together, it will separate as you stir. Add in 1/4 teaspoon pepper, spinach, and lemon juice until the spinach wilts. Sprinkle with extra Parmesan cheese on top.
