Instant Pot® pizza pasta - customizable and quick meal.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 0.5 pound Italian sausage
  • 0.33333334326744 cup diced onion
  • 2 anchovy fillets
  • 0.33333334326744 cup diced bell pepper
  • 0.5 cup sliced mushrooms
  • 2 tablespoons sliced black olives
  • 0.75 cup brown rice rotini pasta
  • 0.25 cup Merlot wine
  • 1.5 cups pasta sauce
  • 0.5 cup shredded mozzarella cheese
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon Italian seasoning
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot®) on Saute mode. Drizzle in oil, then add sausage, onion, and anchovies once the cooker is hot. Sauté and stir until sausage is browned, about 5 minutes. Add bell pepper, mushrooms, and olives; mix well. Turn off Saute mode.
  • Spread the pasta evenly over the sausage mixture. Pour in the red wine, then top with pasta sauce without stirring.
  • Seal and lock the lid. Choose high pressure per manufacturer's guidance; set timer for 8 minutes. Wait for pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions for natural pressure release for about 20 minutes. Then, carefully use the quick-release method for about 5 minutes before unlocking and removing the lid.
  • Top the pasta with a generous amount of mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well to combine flavors. Serve promptly.
