Grilled chicken & kale couscous salad

Quick and delicious 20-minute healthy chicken and couscous salad.
Ingredients:
  • 2 x 175g pkts Microwavable CousCous with Quinoa
  • 200g green beans, cut into chunks
  • 36.40 gm extra-virgin olive oil
  • 2 chicken breast fillets, halved lengthways
  • 31.50 gm lemon juice
  • 20.00 ml finely chopped tarragon
  • 150g kale, trimmed, finely shredded
  • 250 cherry tomatoes, halved
Instructions:
  • Cook the couscous per the instructions on the packet and then transfer it to a large bowl.
  • Boil beans in seasoned water until tender, then chill in ice water before draining.
  • In a large frying pan over medium-high heat, heat half of the oil. Season the chicken and cook for 2 minutes on each side until golden and cooked through. Remove the pan from heat and stir in lemon juice and tarragon. Let it sit for 3 minutes, then slice the chicken and mix it with couscous along with any pan juices. Add beans, kale, tomatoes, and the remaining oil. Season to taste and gently mix everything together. Serve and enjoy.
