Veggie-loaded spaghetti bolognese recipe

Quick and flavorful veggie spaghetti bolognese for busy weeknights with only 5 ingredients.
Ingredients:
  • 375g spaghetti
  • 500g Beef & Pork Bolognese Mince
  • 420g mixed vegetables
  • 500g Mum’s Sause Bolognese
  • Basil leaves, to serve
Instructions:
  • Boil the pasta in a large saucepan of boiling water according to package instructions until al dente. Then, drain the pasta.
  • Heat a generously greased large frying pan over medium-high heat. Once hot, add the mince and cook for 5 minutes, stirring continuously with a wooden spoon to break up any lumps, until the mince changes color.
  • Combine the vegetables and pasta sauce into the mixture, then lower the heat to medium-low. Cover and cook for 5 minutes, or until the mince is fully cooked and the mixture is heated through. Season to taste.
  • Serve the pasta in individual bowls, then layer with mince mixture and fresh basil leaves.
