Veggie-loaded spiral pasta recipe

Satisfying meatless pasta packed with veggies perfect for Meatless Mondays and lunchboxes.
Ingredients:
  • 500g spiral pasta
  • 1 brown onion, thinly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 400g Perino tomatoes
  • 2 carrots, peeled, halved lengthways, thickly sliced
  • 2 zucchini, thinly sliced diagonally
  • 1 tsp dried Italian herbs
  • 1l vegetable stock
  • 120g pkt Baby Spinach
  • 1 long red chilli, thinly sliced (optional)
Instructions:
  • In a large heavy-based saucepan, mix together the pasta, onion, garlic, capsicum, tomatoes, carrot, zucchini, dried herbs, stock, and 2 cups (500ml) water.
  • Bring the mixture to a gentle simmer over medium heat. Stir occasionally and cook for 20 minutes or until the pasta is perfectly al dente.
  • Combine the spinach and chili, if desired, into the mixture. Season to taste.
