Soy-baked trout

Baked trout with spring onions, ginger, chili, coriander, soy sauce, mirin, and lime for a flavorful fish dish.
Ingredients:
  • 2 x 130 g trout fillets
  • 4 cm piece of ginger
  • 6 spring onions
  • 1 red chilli
  • 1 small bunch of coriander (15g)
  • 2 tablespoons low-salt soy sauce
  • 2 tablespoons mirin
  • 1 lime
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4. - Arrange trout fillets in a baking dish. - Grate ginger and chop spring onions, chili, and coriander stalks. Mix with soy sauce and mirin in a bowl. - Pour sauce over trout and bake for 10-12 minutes. - Transfer trout to plates. - Mix cooking juices with lime zest and juice. - Slice green spring onions and scatter over trout with coriander leaves. Drizzle with sauce. - Serve with steamed rice, noodles, Asian greens, and lime wedges.
