Soy-baked salmon with zingy salsa

Impressively easy teriyaki salmon with fresh salsa.
Ingredients:
  • 1 lemon
  • 2 limes
  • 2 x 5cm pieces ginger
  • 150 ml reduced-salt soy sauce
  • 1 teaspoon mirin
  • 1 kg salmon fillet from sustainable sources, ask your fishmonger, scaled and pin-boned
  • olive oil
  • 1 red pepper
  • 2 green chillies
  • 1/2 a bunch fresh mint (15g)
Instructions:
  • Zest the lemon and limes, grate the ginger. In a tray, combine zest, ginger, soy sauce, mirin. Add salmon, spoon marinade, chill at least 90 minutes. For salsa, mix lemon juice, lime juice, oil. Chop pepper, chillies, add to bowl. Add mint leaves, season. Preheat oven to 200°C/400°F/gas 6. Remove salmon, discard marinade. Bake skin-side down for 12-15 min. Flake salmon, top with salsa. Serve with rice and salad.
